WHILE SALADS ARE usually associated with sunnier times, there is no reason why we should completely abandon them for the rest of the year. Many vegetables are at their seasonal best in the winter months, and can make a delicious salad addition, whether served warm or cold.

Winter vegetables like cabbages, beetroot and broccoli are full of colour and very nutrient dense, which is often just what we need at this time of year after some indulgence over the festive period. Whether you’re looking for a fresh, tasty side to your next roast, or a healthy yet hearty make-ahead lunch, we’ve got you covered with our favourite winter inspired salads below.

1. Warm Winter Salad, from Jamie Oliver: Who said all salads need to be cold? This warm salad containing tenderstem broccoli, quinoa and flavours of orange is filling enough for a quick dinner or wholesome lunch. Delicious!

2. Quinoa Salad with Feta and Beetroot, from In Simone’s Kitchen: This salad opts for home cooked beetroot, but if you’re stuck for time, shop bought would also work very well. Beetroot is a powerhouse of nutrients, and its distinct earthy flavour works perfectly with the tangy feta cheese.

3. Persian Style Halloumi Salad, from ProperFood: Salty halloumi paired with sweet pomegranate is a feast for the tastebuds! Haloumi is a meaty cheese full of texture, making it a good replacement for meat if you’re veggie or trying to cut down on your consumption of meat.

4. Rainbow Chard Barley Salad, from The Flexitarian: A robust grain like barley is perfect for a winter salad and is both very healthy and filling. Paired with a creamy ginger tahini dressing, this tasty recipe would be ideal for make ahead lunches!

5. Aubergine and Herb Salad, from Donal Skehan: Aubergines are the star of the show in this hearty salad, served with a creamy dressing and topped with a herbs and grains. An ideal side for a dinner party, with the leftovers making a great lunchbox addition.

6. Winter Coleslaw, from A Basic Cook: This crunchy salad makes for a delicious side dish or sandwich filling. As well as having a naturally sweet taste, this recipe also makes the most of root vegetables at their seasonal best.
