Ingredients
For the tofu
- 2 tbsp sunflower oil
- 400g block tofu, diced
- 1 tbsp coconut oil
- 2 tbsp desiccated coconut
- 1 tsp black pepper
- Zest 2 limes
For the mango salsa
- 1 large mango, finely sliced
- 1 red onion, finely diced
- 1 red chilli, finely chopped
- Juice 1 lime
- Large handful coriander leaves, chopped
- Large handful mint leaves, sliced
To serve
- 2 avocados
- 100ml coconut milk
- Juice 1 lime
- 8 soft mini tortillas
What to do
1. Heat half the oil in large non stick frying pan over a medium heat. Add the tofu to this and fry until golden and crispy on all sides. This will take 8-10 minutes.
2. In the final minute or two of cooking, add the coconut oil along with the coconut, black pepper and lime zest. Toss to coat the tofu.
3. For the mango salsa, stir together all the ingredients in a medium sized bowl and set aside until ready to serve. Set aside half of the herbs to garnish if you like.
4. Blend the avocado with the coconut milk and lime juice until smooth.
5. To assemble the tacos, heat the tortillas. Spread the avocado on the base, top with the tofu and any bits of toasted coconut from the pan, along with the mango salsa. Top with the remaining herbs.
