Here are three leftover turkey recipes to restore family cohesion

Omelettes, soup and stir fries are good ways to get the most out of the leftover Christmas dinner.

AT THIS POINT the holiday season might be starting to take its toll.

Bickering may have taken hold and unwanted gifts already returned to the shops.

Well, we’d like to try and get things back on track.

Here are a few Turkey recipes aimed at putting a bit of oomph back into your Christmas.

Turkey and cheese omelettes 

One of the most versatile dishes, Bord Bía recommends omelettes as a way to recycle those leftover scraps.

What you need 

  • Whatever leftover turkey you have
  • Three eggs
  • Handful of cheese
  • 2 tbsps vegetable oil

What to do 

  1. Heat turkey in the microwave for around one minute.
  2. Beat the eggs together.
  3. Heat the oil in a frying pan and pour in the eggs, waiting until they are partially set. While doing this turn on your oven’s grill to a high heat.
  4. At this point place the turkey and cheese on top, and then place under the grill for a couple of minutes to allow the omelette to fully set.

Turkey soup 

This one comes from the BBC and is easy to make with a lot of ingredients you probably have in your cupboards.

What you need 

  • Olive oil 
  • An onion
  • A chopped red pepper
  • 2 tbsp ground coriander
  • Chilli flakes
  • 2 tbsp basmati rice
  • Turkey/ chicken stock
  • 250g of turkey meat
  • A 410g can of chickpeas
  • Fresh coriander or parsley to season

What to do 

  1. Heat the oil in a large pan and fry the onion. 
  2. Add in the pepper, coriander, chilli and rice, stirring around for about a minute.
  3. Pour in the stock.
  4. Stir in the turkey and chickpeas, seasoning well.
  5. After bringing to the boil and simmering for eight to 10 minutes, stir in the fresh coriander or parsley and serve.

Leftover turkey stir fry 

The stir-fry is another way to get best use out of the post-Christmas turkey carcass. This recipe from UK charity Love Food Hate Waste is versatile and can be used for leftover pork, turkey or chicken.

What you need 

  • 300g of vegetables
  • 2 tbsps vegetable oil
  • 350g of shredded turkey
  • 1 tbsp soy sauce
  • 2 tsp Chinese 5 spice
  • 2 onions
  • 2 cloves of garlic
  • Half a red chilli or a pinch of chilli flakes
  • 2 tbsps water

What to do

  1. Using a wok, heat half the oil at a high temperature and then cook the turkey for three to four minutes. After that take it out of the pan and put into a bowl. 
  2. Add the soy sauce and Chinese 5 spice to the poultry and set aside.
  3. Add the rest of the oil and then cook the onion, garlic and chili for another minute.
  4. Then add the mixed vegetables and return the pork to the wok.
  5. Cover with a lid and cook for another minute, serving with rice or noodles.
