AH, THE HUMBLE cheese toastie. Enjoyed all around the world in many forms, most don’t veer too far from the traditional version; two slices of bread with some ham or tomato and oozing cheese.
But the toastie can come in many guises. While we all love a good old ham and cheese toastie from the local pub, we cannot ignore the rise of the hipster take on the classic; the “grilled cheese”.
While the traditional toastie tends to stay quite true to its original form, the grilled cheese knows no bounds. Think mac ‘n’ cheese grilled cheese, pulled pork grilled cheese, the list goes on. Whatever its form, there is no doubt that the cheese toastie (or whatever you want to call it!) has melted hearts all over. Here are some of our favourites.
1. French Melt, from Glasgow Food Geek: This delicious recipe calls for only 6 ingredients and one pan, which is always a good start! Using a delightful combination of both gruyere and comte, we’re on our way to cheese heaven just reading the recipe!
2. Raclette Toastie, from French Foodie In Dublin: For Ketty, the key to a winning grilled cheese (or tartine, as the French call is), is a great quality sourdough bread. This recipe calls for raclette cheese, which is known for its melting properties, but if you can’t find that a good gruyere will do just fine!
3. Mumbai Toastie, from The Lemon Apron: Naturally there is cheese in this toastie, but the real star of the show is in the fillings. Green chilli, chutney, coriander, garlic and Indian spices take this toastie to the next level!
4. Chocolate And Marshmallow S’more Toastie, from Nessa Robins: Who said a toastie needs to be savoury? Pay attention to this, because once you try this brioche/chocolate/marshmallow melty goodness you’ll be hooked! A great one for the kids, although… maybe not every day.
5. Kimchi Pineapple Grilled Cheese, from Killing Thyme: A mouth watering combination of sweet pineapple and spicy kimchi sandwiched between melty mozzarella and crispy bread. Yum!
6. Tomato Jam Grilled Cheese, from The Kitchy Kitchen: What could compliment melty, gooey cheese and deliciously crisp bread better than a good spread of sweet tomato jam? Even better, Irish tomatoes are at their seasonal best in the summer months so a tomato jam like this is a great way to use them up!
