Ingredients:
• 4 Skellig Bay salmon fillets
• 1 head of broccoli
• 200g soft cheese
• Juice ½ lemon
• 350g dry penne pasta
• 300g cherry tomatoes
• 1tbsp olive oil
• ½ tsp mixed herbs
• ¼ tsp onion granules
• ¼ tsp garlic granules
• Optional pinch of chilli flakes
• 200ml pasta water
• Salt & pepper to taste
• Fresh parsley & parmesan
Method:
• Preheat oven to 200°c.
• Skin the salmon fillets and cut into bitesize chunks. Chop the broccoli into smaller florets also.
• Add the salmon, broccoli & cherry tomatoes to your baking dish. Add also the herbs, seasonings, cream cheese, olive oil and salt & pepper.
• Bake for 20 mins.
• Boil the pasta until al-dente (8-10 mins), retaining 200ml of the pasta water.
• Add the drained pasta to the baking dish, along with the lemon juice & pasta water and mix well. Season to taste and top with fresh parsley & grated parmesan.
• Serve & enjoy!
