7 easy-to-make brunches for lazy weekends

AH, THE WEEKEND. You just can’t beat it.

Lie ins. Time to yourself. No work to go to (for most of us, anyway).

Treating yourself to a late breakfast or, if you will, a brunch, is probably one of the highlights of the weekend. But even better than going out for brunch? Having an amazing brunch at home, in your pyjamas. 

To help you out, we’ve rounded up seven amazing brunch recipes – some of which can even be prepared in advance.

1. Wholemeal scones

Nothing beats a warm scone topped with butter, jam and if you’re feeling really fancy – whipped cream.

Alternatively, lemon curd is another great topping if you have an urge to try something different.

These scones are made in about 25 minutes from beginning to end – and as Kevin says in the video, you could even top them with cheese, bacon or scrambled egg to get the full brunch effect.

2. Dirt bombs

What are dirtbombs, you ask? They’re basically cinnamon-sugar topped donuts, and utterly delicious.

Who can be bothered deep frying donuts, tasty as they are, when you could whip up a batch of these instead? And they’re healthier too.

Win win.

3. Huevos rancheros

Huevos rancheros are basically a kind of tomato based stew with some eggs cracked in on top and heated together till they’re all cooked.

This version here has taken a completely new approach to it by taking out the tomato stew and replacing it with a spicy bean mix and an avocado salsa verde – but it all looks so good, who’s going to complain?

Here’s a more traditional recipe if you fancy trying that instead.

4. Ham, mushroom and goats cheese bread pudding

Bread and butter pudding is traditionally a dessert, but this savoury twist makes a delicious brunch idea.

If you don’t have goats cheese, we’re pretty sure a sharp cheddar would work too.

Possibly the best part of this recipe is it can be whipped up the night before and left in the fridge, ready to be put in the oven when the time comes.

Perfect.

5. Cheesy potato breakfast casserole

Casserole? For breakfast?

Oh yes. It’s hot, cheesy, potatoey goodness – what’s not to love?

Now the recipe calls for frozen shredded potatoes, but we think thinly slicing some spuds will work just fine.

This is another one that can be made up in advance, leaving you to put it in the oven at your own leisurely pace in the morning.

6. Pancakes with berry compote

Pancakes are, of course, classic brunch fare. Whether that’s an American, thicker style pancake drizzled in maple syrup, or a crepe style as we have here.

Here’s a nice recipe and video to show you how to make both the pancake and compote from scratch – and bonus, they can be made with the kids. That’s how easy it is to make.

7. French toast

You can’t have a brunch without French toast being mentioned at some point, right?

This recipe claims to be the best French toast recipe you’ll ever try – so you’ll have to tell us if it is.

With cream, honey, cinnamon and vanilla, it’s certainly full of flavour.

If you’d like something a little fancier that can be made ahead of time, here’s a recipe for caramelised pear French toast bake.
