'I make this 15-minute beef satay at least once a week': 5 creative meals from a Meath mum-of-two

Including a healthier take on red velvet pancakes.

EACH WEEK, WE ask a home cook about the dishes they’ve been whipping up of late – from simple suppers to lavish lunches.

This week, Meath-based foodie Gina Daly (@thedalydish) shared five of her most-loved meals with us.

The self-named “air fryer queen”, Gina decided to revamp her diet a few years back, after falling off the healthy eating wagon. Thanks to some lifestyle and nutrition changes, the mum-of-two has lost five stone in total. 

While she has gained a substantial following on Instagram through sharing her recipes, Gina says one of the main aims for her “is just to have the craic”, both with cooking and social media.

Here’s what she has been creating of late, from breakfast biscuits to a healthier homemade spice bag.

1. Oaty breakfast biscuit bakes: These are super easy to make. I’ve never been fan of traditional breakfasts, cereal or toast. These biscuits are delicious and are good for you – but taste like a real treat, so it’s a win-win.

2. Yogurt-filled red velvet pancakes: These are lush. I have these for breakfast sometimes and also as a tasty treat after dinner. My kids love them too. We’ve done a few family trips to the States and we always loved having big American pancake stacks for breakfast, and these definitely hit that spot without hitting the waistline as I use yogurt between each pancake rather than cream or butter and oats to make the pancakes themselves.

3. Wholemeal pizza bagels: These are a great healthy lunch snack and are so easy to make.  I use wholemeal bagels and put them in the airfryer for ten minutes. I love bagels and I love pizza so when you mix the two together, it’s a match made in heaven. I’m a big fan of spicy food so I use jalapeno relish on these to pack a little extra bite.

4.  Better than a takeaway: A spice bag was one of the first dishes I made when coming up with healthier alternatives to my favourite meals. This is my number one fake-away by far.  

 5. Super beef satay: My husband loves this dish. It’s super healthy and tastes just as good, if not better, than most satays I’ve had in the past. This can be made in 15 minutes and is full of delicious goodness.  I make this at least once a week.
