AS A SMALL country that spends €103 million on eggs every year, it’s safe to say we like our eggs. And why wouldn’t we?

The humble egg has many valuable health benefits. They contain high quality protein and good levels of B12, as well as fat soluble vitamins. The list goes on! Scrambled, poached, boiled, there are many ways to enjoy eggs, but one of the most satisfying has to be a well-cooked omelette.

Easy to prepare and tasty, omelettes are an excellent option for almost any meal – a filling breakfast, a quick lunch or a wholesome supper. Not to mention omelettes are an extremely flexible dish that can be dressed up or down in so many delicious ways! So, add the eggs-factor (we couldn’t resist) to your next omelette with the help of some inspiration below:

1. Smoked Salmon Omelette with Chive Crème Fraiche, from Drizzle and Dip: This luxurious omelette will fill you up for hours and would be delicious for breakfast, lunch or dinner. Don’t have smoked salmon? Smoked haddock or cod would also work a treat.

2. Thai Breakfast Omelette, from Donal Skehan: Bursting with fresh flavours, this Thai inspired omelette is quick to make, fresh and super healthy. Something a little bit different to serve at your next brunch!

3. Souffle Omelette with Cheese and Chives, from Delia Smith: While making a traditional souffle can be tricky and time consuming, a souffle omelette involves very little fuss. A meal in itself, this would make a delicious supper served with a green salad.

4. Spicy Masala Omelette, from Maunika Gowardhan: The combination of eggs, spices and fresh green chilli means this recipe has a welcome spicy kick. Made with turmeric, a natural anti inflammatory, this recipe is ultra healthy too.

5. Sweet Blueberry and Lemon Omelette, from Gourmande in the Kitchen: A light, lemon flavoured omelette stuffed with juicy blueberries. Serve this warm or cool with a dollop of crème fraiche and a drizzle of honey!

6. Super Green Omelette, from Natalie Brady: With just a few ingredients, this low carb super green omelette is high in protein and healthy fats and can be made in under 10 minutes. Perfect for a healthy breakfast or easy lunch!
