IS THERE ANYTHING more comforting that a warming one-pot on a cold autumnal day? As well as being seriously tasty, most casserole recipes are easily adaptable and can use up whatever veggies you happen to have in the fridge. Casserole literally means “pan” in French, which is where this one-pot earned its name.

Usually consisting of meat, vegetables and a binding ingredient (potatoes, rice or flour) and cooked slowly, this tasty dish is best served simply with some crusty bread, mash or greens.

Casseroles are handy for batch cooking to enjoy the next day, or freezing for further ahead. Allowing the dish to settle overnight can enhance the taste and give the flavours more time to infuse.
