'There's nothing like a hearty, warming chicken curry': 5 recent meals from a Dublin food photographer

Shilpa Razniewska regularly makes healthier twists on traditional Indian dishes.

EACH WEEK, WE ask a home cook about the dishes they’ve been whipping up of late – from simple suppers to lavish lunches. 

This week, Dublin-based food photographer and food stylist Shilpa Razniewska (@soulful_and_healthy) shared with us five flavour-packed dishes that she turns to time and time again.

After giving birth four years ago, Shilpa started her clean-eating journey. But she was determined to prove that “healthy eating doesn’t have to be boring.” Most of Shilpa’s dishes are slightly altered takes on traditional recipes, like her dairy-free curries and her creamy banana “nice cream.”

Shilpa shared five dishes she’s made at home of late…

1. Wild blueberry ‘nice’ cream: Once you start making ‘nice’ cream, you’ll never go back to processed ice cream. The creaminess it has is nothing less than any regular ice cream and the best thing is, it’s a healthy and simple way to eat more fruit. It’s great as a breakfast bowl, a mid-morning snack or even as a dessert. Just throw frozen bananas, blueberries and some sweetener into a blender, and there you go!

2. Roasted turmeric cauliflower soup: Roasting a chopped cauliflower in the oven with a blend of turmeric, cumin and paprika gives this soup such a lovely, smokey flavour. Just what you need on a cold winter’s night. Serve it with crusty bread for a satisfying, warm and fulfilling meal. 

3. Chicken curry with creamy cashew paste: There’s nothing like a hearty, warming chicken curry. I love traditional Indian butter chicken, but since I’ve learned that I’m lactose intolerant I’ve had to find new ways to make my favourite dishes. To make this dish dairy-free, I used cashew cream, which is raw cashews soaked overnight and ground into a super smooth paste. The method of grilling the chicken gives a delicious smokiness to the curry.

4. Nutty energy balls: I always make these when I’ve a craving for something sweet. They’re tasty, healthy and satisfy my sweet tooth. Simply add dates, maple syrup, some ground almonds, cardamom pods and chia seeds to a blender and blitz. Roll them in desiccated coconut for extra flavour. 

5. Sriracha honey grilled chicken: I’ve recently wanted to explore and experiment with different flavors and recipes other than just Indian, so I came up with this absolutely gorgeous Asian-inspired sriracha honey grilled chicken and boy oh boy was I impressed! The spiciness from the sriracha and the sweetness from pure honey is the best combination.
