'Even our seven-year-old loves this dish': 5 recent favourites from a Seattle native living in Meath

Michelle Gloria-Moran’s home kitchen takes inspiration from Ireland, the US and her Filipino heritage.

EACH WEEK, WE ask a home cook about the dishes they’ve been whipping up of late. The kind of food you don’t need a recipe for, from quick snacks to empty-the-fridge dinners.

This week, Michelle Gloria-Moran (@tastygoodgrub) – who’s from Seattle but moved to Ireland 13 years ago – shared five of her favourite dishes that she turns to time and time again.

“As a busy parent, I found that I wasn’t looking after myself properly by not making good food choices,” says Michelle, who made the decision late last year to choose more nutritious and healthy foods over sugar-based snacks.

Not only have I been inspired by my Filipino heritage and my mom’s cooking but I’ve also been inspired to try many recipes I have come across – some easy and some not so easy.

From accordion potatoes to honey garlic shrimp, below are five of Michelle’s go-to dishes.

1. Accordion potatoes: Looking for something different other than boiled or mashed potatoes? Simply wash and slice potatoes but don’t slice all the way down or it won’t have the accordion look. Half way through cooking, don’t forget to add the fresh bay leaf to add a little bit of flavour to the potato. It’s subtle, but you can taste it.

2. Avocado chicken salad: Now that it is summer and it’s quite warm outside, salads are a great way to stay cool in the kitchen instead of cooking over a hot stove. The chicken breasts were cooked ahead as I also like use them for sandwiches. For the bacon, I grilled bacon medallions as they already have the fat cut off. The great thing about this salad is you can add fresh greens to the mix or add cooked pasta that has been cooled down. The dressing was a mix of lemon juice and rapeseed oil with some salt and pepper.

3. Blueberry crumble: I love to eat blueberries just as they are or use them for baking. This dish is one of the easiest dishes you can make and it’s tasty. It will satisfy any sweet tooth. I’ve started to keep coconut oil, oats, pecans, almond flour, maple syrup and vanilla syrup as staple ingredients in my pantry and these are all the ingredients needed to make the crumble. Stock up – it’s worth it!

4. Honey garlic shrimp: This is a super quick and easy dish for the family and it’s one of my own creations. Spray a few squirts of low cal extra virgin rapeseed oil and toss in the shrimp. While it’s cooking, in a small bowl, I combine gluten free soy sauce, honey, fresh minced garlic and black pepper. I pour the mixture into the shrimp and stir fry for another few minutes, finished with sprinkled fresh coriander on top.

5. Baked cod and mussels: Another one of my creations and believe it or not, our family loves seafood, especially my seven-year-old! You can’t see it but I used a cheese slicer to cut a courgette and laid it on the tray followed by the cod fillets. Drizzle lemon juice, dried dill and black pepper. Meanwhile, cook the mussels in a wok with onion, garlic and  lemon juice. When almost cooked, toss in a chopped tomato followed by a scallion. Once the cod is cooked, sprinkle mussels over the fish. Side dishes are limitless; it can be served with rice, pasta or bread.
