The vegan
Don’t eat eggs or dairy? You can still hop on the train to pancake town. These recipes are also handy to know for when you’ve run out of eggs and are still craving some pancakey goodness.

The gluten-free
Are you a coeliac, or gluten-intolerant? Fret not, there are plenty of gluten-free pancake recipes about.
If you’re also dairy-free, here’s one you can try:
- This simple one from BBC Good Food uses Dove’s Farm gluten-free flour (which is available in Ireland).
- Here’s another one from the Coeliac Society of Ireland, which is more eggy.
Vegan and gluten-free? Fret not. this requires a few more ingredients, but you probably have most of them in your cupboard already.
