'You can't beat a classic Irish stew': 5 dinner table favourites from a passionate home cook in Meath

Vinny Reynolds shares his mealtime favourites – and the key to flavourful lamb.

EACH WEEK, WE ask a home cook about the dishes they’ve been whipping up of late. The kind of food you don’t need a recipe for, from quick snacks to empty-the-fridge dinners.

This week, Vinny Reynolds (@vinnysfood) shared five flavorful recipes that he never bores of.

“I would describe myself as a keen home cook, with a long time love of food and a passion for trying out new things and put my creative cooking style to them,” says Vinny. “For me, it’s all about putting love and effort into food to create the most amazing dishes.”

From lamb stew to 72-hour cooked beef, below are five of Vinny’s favourite recipes…

1. Traditional Irish lamb stew: You can’t beat the classics. Stews are what so many people were reared on and I have a real fondness for them. To make my stew special I sometimes use the leg of a lamb for its tasty super tender meat. I also brown the meat well to get a great base flavor for the stew and I always use a homemade chicken, beef or lamb stock to give that extra depth of flavor.

2. Turkish style pizza: Lahmacun is made with a crispy thin flatbread and a savoury mildly spiced topping that’s made with ground beef or lamb. This is essentially an easy to make, healthy pizza and you’ll probably have the ingredients needed to make the topping at home. The recipe for the meat topping is here.

3. 72-hour beef: I love sous-vide cooking because it’s a hands-on cooking method that allows you to take a tough cut of meat and turn it into a tender meaty masterpiece. These beef ribs are sous-vide cooked at 58°c for 72 hours then fried on a cast-iron pan to caramelise with butter, herbs and garlic. Believe me, they were well worth the wait.

4. Szechuan style prawn noodles: The beauty of a stir fry is that with a few chopped vegetables and the basics like soy sauce and ginger, garlic, onion, you get a quick satisfying meal for during the week.

5. Falafel: Falafel is one of my all-time favorites. Meat free and super delicious, and perfect for any meal: with pitta bread and salad for lunch or prepared as a burger for dinner. The best falafel recipes use dried chickpeas. I love Tori Avey’s falafel recipe.
