'I've perfected my chips': 5 delicious family favourites from mum-of-two Catherine

Including a dessert for breakfast (everyone’s favourite).

EACH WEEK, WE ask a home cook about the dishes they’ve been whipping up of late. The kind of food you don’t need a recipe for, from quick snacks to empty-the-fridge dinners.

This week, Catherine Durran (@catherinedurran) shared five meals that hit the spot for her entire family.

“I have two boys that never stop eating and love to keep me busy,” she says. “I recently started to change how I cook. I don’t cook with oils or butter, I eat more greens and make all my meals from scratch. I try to plan my meals so that there is no food waste.”

From a “dessert for breakfast” dish to a tasty fake-away, below are five of Catherine’s go-to recipes…

1. Peanut butter and chocolate French toast: Dessert for breakfast? Sure why not! This is my family’s favourite Sunday morning treat. It is simply perfect and smells amazing. I like to mix 1 tsp of vanilla essence, 1 tsp of sweetener and a pinch of cinnamon for the egg mixture. To keep it wholesome I like to use whole wheat bread.

2. Sticky garlic chilli chicken: This is one of my favourite Friday night fake-away dishes to cook as it is a delicious alternative to a takeaway. I like to add date syrup to the frying pan whilst the chicken is cooking to make the chicken sticky and sweet. I add lots of different spices like smoked paprika, garlic and ginger to make it flavourful.

3. Philly cheese steak sandwiches and homemade chilli chips: I love making this for dinner as it is quick and easy to cook. I always marinade the beef to keep it juicy. I have perfected my chips as this is always a side dish I love to eat. I always boil the chips first for a couple of minutes to soften them. I then coat them with mild chilli powder, garlic granules and onion salt before placing into the oven. Both dishes are satisfyingly tasty and delicious.

4. Kale and butternut squash soup: This is a really easy homemade soup to make as there is very little preparation for it. I like to make this soup in large quantities at the weekend so that I can have it during the week for when I’m feeling exhausted. This is a great after-school snack as both my sons really enjoy this dish.

5. Peanut butter cookies: I love baking as I find it very relaxing, and I love to be creative when it comes to cooking. I love sweet and salty flavours so my peanut butter cookies are the perfect combination.
