IT’S HARD NOT to have a weakness for anything that contains lots of butter, and shortbread is one of those buttery treats that’s hard to beat. Historically, shortbread has been used to celebrate special occasions, and I’m sure we all have memories of decorating these little biscuits at Christmas or Easter.
Shortbread is really quite a simple recipe with only 3 basic ingredients, and is great for taking on other flavours and textures. A good shortbread should be crisp and crumbly but not dry, which can be tricky to achieve. Why not master one of the recipes below over the Easter weekend? We’ve rounded up a delicious mixture of both sweet and savoury shortbread recipes that the kids can get involved in too.
1. Lemon Balm and Rosemary Shortbread, from Fiona Grows Food: Buttery, crumbly shortbread flavoured with a hint of lemon balm and rosemary. Lemon balm is a wonderful ingredient that can be grown easily in a garden, and can add a fresh citrus flavour with a hint of mint to many bakes.
2. Easy Chocolate Shortbread, from A Mummy Too: Decorate with melted chocolate from leftover Easter eggs for a tasty Easter treat. A fun recipe to bake with the kids over the Easter holidays.

4. Classic Shortbread, from Smorgasblog: You can’t go wrong with a simple, tried and tested shortbread recipe. This classic shortbread uses just four ingredients and is very simple to make. Serve as it is, or with some strawberries for a tasty dessert.
5. Lemon Shortbread, from Nancy Birtwhistle: Delicately flavoured with lemon zest and extract, these can be served on their own or decorated with some royal icing made using leftover egg white. This recipe makes 40-50 biscuits, so they’re perfect for a larger gathering!
6. Gluten Free Macadamia Shortbread, from Mr & Mrs Romance: Macadamia nuts offer a rich layer of flavour and texture to a traditional shortbread recipe. This recipe has also been successfully tested using gluten free flour, so it’s also suitable for coeliacs.
